Mom’s Best Dressing: Garlic Parmesan Vinaigrette

Looking for a flavorful and easy homemade dressing to elevate your garden salads? Our garlic parmesan vinaigrette combines the salty, nutty taste of parmesan cheese with the brightness of fresh garlic, balanced by a tangy vinaigrette base. The ease of preparation and bright flavor makes this dressing the perfect pair for summer salads. Give us some crunchy greens, fresh tomatoes, a few slices of cucumber, shredded carrot, protein, topped with a zippy dressing and dinner is a hit! It has easily become a staple for our summer table.

Growing Lettuce

Lettuce is one of the easiest and most rewarding vegetables to grow at home. It remains uncomplicated and a delicious base for meals in a pinch. Whether you have a large backyard, a full homestead, or an apartment balcony, fresh lettuce can thrive with little effort. Homegrown lettuce has better flavor, and stays fresh twice as long. It has become a fantastic way to engage with nature and the family during the spring and summer months

Lettuce is a cool weather loving veggie. While it may need some warmth to germinate, it will tolerate low temperatures and survive frost with protection. A mixed lettuce has the best flavor and texture for eating, so we grow combinations of romaine, butterhead and looseleaf.

Salad Dressing Ingredients

1 head of garlic

2 TB red wine vinegar

2 tsp dijon mustard

3 TB shredded parmesan

⅓ C olive oil

Salt & pepper

Instructions

  1. Mince the garlic and shred the parmesan. 
  2. Combine ingredients all together in a jar with a lid. 
  3. Shake to combine well!

Serving & Preparation Tips

  1. Olive oil becomes a solid in the fridge. Remove before preparing a meal to allow the olive oil to become a liquid again. 
  2. Adjust the garlic and parmesan levels to your taste!
  3. Serve with something earthy and something tart! For us, that can be black olives and cranberries, or pecans and strawberries, or pumpkin seeds and citrus.
